Known in the Americas as Cilantro Leaf, Coriandrum sativum is typically used fresh in salsas, guacamole and soups. It has bright, citrus notes which makes it excellent in citrus marinades, pico de gallo, salsas and mexican cooking. The dried leaf can be used in the same ways. Cilantro leaf is at home with onions and garlic and is often added to marinades, dips, black beans, soups and sauces.
