Just in Queso Dip

2 tbls butter 2

tbls all-purpose flour

1 cup whole milk or half-and-half

1 1/2 cups shredded white cheddar cheese

2  tbsp pico de gallo

1/2 tbls Taste of Sol Chili Seasoning or Ça C'est Bon Cajuna Cajun

1/4 teaspoon salt (or more to taste)

Clear out all the stress from the day and focus on creating.  Melt butter over medium heat. Whisk in flour and cook, whisking throughout, for 1 minute. Gradually add the milk, whisking constantly, until a thick sauce forms (this should take 6-7 minutes). Melt in the cheese, whisking constantly, for 1-2 minutes.  Add the pico de gallo and season with the Taste of Sol Chili Seasoning and salt. Serve warm, garnished with sprig of cilantro.

Excellent served with pita, carrots and chips
