Spinach Salad with Curry Vinaigrette
This salad is so yummy. This will serve 4
- 8 cups fresh spinach
- 1/4 lb bacon cooked then chopped your favorite way, Ours is Jeddy's Bacon
- 8 sliced mushrooms
- 1 cup grape tomatoes cut in half
We will add other greens as well from our food forest yard like katuk and sweet potato greens.
Curry Vinaigrette
- 1 Tbsp Keep Calm and Curry On
- 3 Tbsp Red Wine Vinegar
- 1 Tbsp Dijon Mustard
- 9 Tbsp Olive Oil
In a medium bowl, whisk together vinegar and mustard. Add oil in a thin stream, whisking constantly, until the oil is completely incorporated. Add curry powder and whisk until smooth. Season to taste with salt.
In large bowl toss spinach, bacon, mushrooms and tomatoes with curry vinaigrette. Serve immediately.
