Chim Chim Churree Fries

We love homemade french fries. So we love to come up with creative ways to top them.

Ingredients:

  • 4 russet potatoes
  • Peanut oil or vegetable oil for frying
  • Jeddy's Seasoning
  • 1/2 cup Gorgonzola cheese
  • fresh cilantro chopped for garnish
  • red wine vinegar
  • warm water
  • Chim Chim Churree Rub
  • Olive Oil

Instructions:

Scrub the potatoes and cut into french fry stick, place them in a bowl with cold water and sea salt to soak. This releases some of the starch so you can have a crispy fry not a soggy one. 

Hydrate the chim chim churree by adding chim chim churree to hot water for 10-15 minute. 

Heat oil in fryer, or pot with sugar thermometer to 350 degrees F.  Once oil is to temp drain and dry the potatoes. Add small batches to fryer and cook to golden color.  Remove and put on tray with rack or tray with paper towels.  Finish the rest of the fries. Once the first fry is completed take the initial batch and put back in the fryer.  This gives you a crispy fry.  Once you remove fries from oil. Toss with Sea Salt and Jeddys Seasoning. Repeat with remaining.

With hydrated chim chim churree combine with 1 tbsp red wine vinegar and 2 tbsp olive oil.  Drizzle over cooked french fries and sprinkle gorgonzola crumbles on them.
