Sweet Potato Black Bean Chili


2 can diced tomatoes

2 cans black beans

1 sweet yellow onion diced

1 Yellow pepper diced

1 Red pepper diced

1 jalapeño diced

2 cloves garlic

3 purple sweet potatoes peeled & diced

Packet of Taste of Sol Chili Seasoning

Qt Bone Broth (Vegetable broth if Vegan)

Jeddy’s Seasoning


1. Saute sweet potatoes, peppers and onions in pan with a 2 tbsp of olive oil. Season with Jeddy’s Seasoning. When onions appear clear, add garlic, saute for another 1-2 minutes

2. Place all remaining ingredients in pot. Add sautéed vegetables.

3. Simmer till sweet potatoes are tender. Garnish with sour cream, cheddar cheese and chives.
