Sweet Potato Black Bean Chili
INGREDIENTS:
- 2 can diced tomatoes
- 2 cans black beans
- 1 sweet yellow onion diced
- 1 Yellow pepper diced
- 1 Red pepper diced
- 1 jalapeño diced
- 2 cloves garlic
- 3 purple sweet potatoes peeled & diced
- 2 tbsp of Taste of Sol Chili Seasoning
- Qt Bone Broth (Vegetable broth if Vegan)
- Jeddy’s Seasoning
DIRECTIONS
1. Sauté sweet potatoes, peppers and onions in pan with a 2 tbsp of olive oil. Season with Jeddy’s Seasoning. When onions appear clear, add garlic, sauté for another 1-2 minutes
2. Place all remaining ingredients in pot. Add sautéed vegetables.
3. Simmer till sweet potatoes are tender. Garnish with sour cream, cheddar cheese and chives.
