There is no denying a good ice cream is hard to pass up and each of us have our own favorite flavor, which means when we buy ice cream it takes up our whole freezer just about. We try not to buy it very often anymore because of freezer space and it is just too easy to become an evening habit of a scoop or two while we play family games or watch our latest binge show.
We do have one we all agree on and it is much healthier cause we get an extra does of veggies. Not your average ice cream but one that if you don't think about the ingredients you wouldn't know by the flavor. We were at a trade show one weekend several years back and the booth next to us was vitamix. The salesman offered us his favorite recipe. We then had him make it the next day for our kiddos. They were hooked. He even showed them how to make it and gave them the recipe. We still make it to this day.
Ingredients
- 1 cup fresh spinach
- 1/4 cup fresh mint leaves or 5 drops peppermint extract
- 1/2 avocado
- 1 can full fat coconut milk
- 1 tsp vanilla
- 1-2 tbsp Honey or maple syrup
- mini chocolate chips or you can use cacao nib but you will need more sweetener for cacao nibs
- Ice cubes
In the vitamix blend the fresh spinach, mint and coconut milk until there are no chunks or pieces. Once blended thoroughly add avocado and honey/maple syrup. Blend to combine. Add several cups of ice using stamper to get it to your desired thickness. Low blend chocolate chips into it just enough to mix them not completely pulverize them. This makes a soft serve ice cream
You can put in a container and freeze to harden some or eat right there. If you have one of those frozen ice cream makers, you can forego the ice and put it in that or you can even make an mint ice cream popsicle.
We have tried other variations adding frozen banana or adding our green blend powder, matcha or chlorella but those who are sensitive may taste a grittiness so we don't often use the powders unless we are trying to supplement.
