Banana Chocolate Oatmeal Muffins
Ingredients
- 2 large overripe bananas
- 1 1/2 cups all purpose flour
- 1 cup chocolate chunks
- 1/3 cup maple syrup
- 2 large eggs
- 3/4 cup milk
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 2 cups rolled oats
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 cup cocao powder
- 1 tsp Sea Salt

Prep: Preheat oven to 350° F. Grease a muffin tin with nonstick spray or line it with muffin papers.

In a large bowl mash the bananas using a fork. Add the maple syrup, eggs, milk, cinnamon, and vanilla to the mashed bananas and whisk together until combined. Add the dry ingredients - the oats, flour, baking powder and soda, salt, and cocao powder. Whisk until well combined. Stir in the chocolate chunks last.

Bake: Fill your muffin cups with the batter. Sprinkle some extra chocolate chunks on top before baking for extra decoration, if desired. Bake for 15-18 minutes. There should not be any wet batter when you put a toothpick in it. Sprinkle a pinch of flaky sea salt on the warm muffins.
