National Oatmeal Muffin Day - December 19

Let's just try an oatmeal muffin recipe to celebrate this day.

Banana Chocolate Oatmeal Muffins

Ingredients

  • 2 large overripe bananas
  • 1 1/2 cups all purpose flour
  • 1 cup chocolate chunks
  • 1/3 cup maple syrup
  • 2 large eggs
  • 3/4 cup milk 
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 2 cups rolled oats
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup cocao powder
  • 1 tsp Sea Salt 

Directions

  • Prep: Preheat oven to 350° F. Grease a muffin tin with nonstick spray or line it with muffin papers.
  • In a large bowl mash the bananas using a fork.  Add the maple syrup, eggs, milk, cinnamon, and vanilla to the mashed bananas and whisk together until combined. Add the dry ingredients - the oats, flour, baking powder and soda, salt, and cocao powder. Whisk until well combined. Stir in the chocolate chunks last.
  • Bake: Fill your muffin cups with the batter. Sprinkle some extra chocolate chunks on top before baking for extra decoration, if desired.
    Bake for 15-18 minutes. There should not be any wet batter when you put a toothpick in it. Sprinkle a pinch of flaky sea salt on the warm muffins.
